Ingredients

For the Sauce:

  • 3/4 cup raw cashews
  • 1/2-3/4 cup water adjust based on desired thickness
  • 1 medium clove garlic peeled
  • 2 teaspoons nutritional yeast
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt plus more to taste
  • 1/8 teaspoon freshly ground black pepper plus more to taste

For Serving:

  • 14.5 ounce package gnocchi or 8 ounces cooked pasta your choice of base
  • Fresh minced parsley or chiffonaded basil for garnish

Instructions

Instructions:

  • Start by soaking your raw cashews in water for at least 15 minutes if you have time. If you’re in a hurry, you can skip this step.
  • In your high-speed blender, combine the soaked cashews (or unsoaked if you're pressed for time), 1/2 cup of water, garlic, nutritional yeast, onion powder, kosher salt, and black pepper. Blend on high until completely smooth.
  • Give your sauce a taste! Adjust the salt, pepper, or nutritional yeast according to your preference.
  • While you are blending the sauce, bring a pot of water to a boil. Add your gnocchi or pasta and cook according to package instructions.
  • Once your pasta or gnocchi is cooked and drained, return it to the pot over low heat. Pour the creamy 5-Minute Dairy-Free Alfredo Sauce over the pasta, stirring gently to coat. Serve immediately, garnished with fresh parsley or basil.
